Change the word "edit" at the end of your template doc's URL to "copy" and save the altered URL as a bookmark. When you open it you'll get a prompt to make a copy. This is fast and you'll never accidentally overwrite your template. The paid business ones have it. For personal, I have to make a copy of a base doc.
I see some default templates, but no way to add our own. I believe it used to be in GSuite > Apps > Google Workspace > Drive and Docs > Templates. But it's not there anymore. I do see templates under "Sites", but not "Drive and Docs".
