For each time you unpin, try clicking on the game to shift focus to the game screen. If the taskbar is still visible, continue to unpin.
What i do is I alt+tab out of the game and open taskbar settings of windows and change the toggle of "Hide Taskbar in Window Mode" and go back to the game. It hides the taskbar after that in Borderless Windowed mode.
