I've flown TACA - they are better than any American flag carrier but not as say Singapore Airlines. In other words, they are a good airline and I would definitely pay more to fly with them than say Spirit - which constantly nickles and dimes you (i.e. Ryan Air of the US).
I've flown with avianca several times without issue. They're a 3 star airline so they don't have any bells and whistles like in flight tvs or service on most of their planes. They're typically about as low as I would go but they have been fine for short flights around South America.
