2 Αυγ 2023 · Over the years, I found that white distilled and cider vinegars with 5% acidity (50 grain) are the best ones to use for home canning. The reason for this is that the acid in vinegar helps to prevent the growth of harmful bacteria, such as Clostridium botulinum, which can cause botulism.
Vinegars of 5 percent acidity (50 grain) or more are recommended for water bath canning (and for the Fowlers Vacola method). Most recipes will state either white vinegar or cider vinegar.
