Gravity, in the context of fermenting alcoholic beverages, refers to the specific gravity (abbreviated SG), or relative density compared to water, of the wort or must at various stages in the fermentation. The concept is used in the brewing and wine-making industries.
By comparing the specific gravity before fermentation (known as original gravity, or OG) to that after fermentation (final gravity, or FG) and applying a formula it's possible to calculate the alcohol content. Taking gravity readings is the only sure way to know that a beer has stopped fermenting.
1 Φεβ 2020 · To correctly calculate the ABV of your beer, you must take a specific gravity reading both before you ferment the wort and after fermentation has completely finished. This pre-fermentation reading is called the “Original Gravity” and the post-fermentation reading is known as the “Final Gravity”.
