Broccoli cheese rice casserole is a dump-and-go slow cooker recipe with very little prep. Just dice an onion, cube the Velveeta for easy melting, and combine the ingredients in the slow cooker.

White rice is preferred for this recipe but brown rice would work as well. Fresh broccoli can be used instead of frozen broccoli. Frozen broccoli is easier to keep until ready to use so I prefer frozen.
25 Μαρ 2024 · This broccoli cheese rice casserole can be served as a main course (make it vegetarian or shred up some of our Instant Pot whole chicken and stir it in) or a side dish and it’s a great way to get the kids to eat some green veggies. The cheese and rice make the broccoli totally kid-approved, in my experience.
