EEPROMs are the preferred storage method since they're quicker to erase and rewrite. You should be able to pick up a 28C256 as a suitable replacement. It's a 32K chip and it's pinout is identical to the 62256 RAM chip that Grant uses in his designs. To use it as a 16K chip, just connect A14 to ground.
