While sea hollies can be bred for exquisite silvers and subtle violets, they are often most readily identifiable for their blue tones. ‘Lots of eryngiums are strikingly blue,’ say Brian and Kathy Pike, who hold the UK National Collection of Eryngiums in North Yorkshire.
