My genuine advice is following one of the spoiler-free mod guides and manually installing from deadlystream, nexus, or gamefront. Kotor2 is one of the easiest games to manually mod, with TSLPatcher installing to the main directory or dragging and dropping files manually to the override folder.
The Nexus allows you to directly install mods to Vortex, a handy feature, but it's easy to put a mod that you downloaded manually and install it through Vortex. Just go to the "Downloads" page and drop the zip, rar, or 7z onto the unloading zone at the bottom of the page.
The most important mod is The Sith Lords Restored Content Mod for KOTOR II. You can look at the subreddit's official mod build guide for a good list. You don't need to download all of them, just the ones that appeal to you.
I would throw in Brotherhood of Shadow Solomon's Revenge. It's a nice mod to play as it serves somewhat as a bridge between Kotor I and II thematically speaking. It is also, to my awareness, the only mod that actually adds new content to the game that wasn't cut from release.
