Ideally you want to hold off on converting until you have achieved the Peace of Westphalia. Assuming you want to be the Emperor, the best thing to do is become Catholic emperor and pass erbkaisertum as soon as possible.

6 Ιουλ 2018 · Another way to make the peace of westphalia happen is by forcing conversion of the emperor (the leader of the catholic side) while you are fighting the emperor outside the league war. I was able to do that while playing with UK and I sneak attacked Austria while they were fighting protestants.
22 Οκτ 2017 · Technically by joining the protestant side, thereby making them strong enough to feel safe declaring, then making sure WS stays within acceptable bounds and dragging out the war until a peace without supremacy fires.

By attacking them, taking a lot of money, etc. you can either make them sign a separate peace with the league leaders or weaken one sides advance. In the end you should declare war on the league leader of the stronger league, which will probably make them try to end all other wars.
To get the peace of westphalia the religous league war must either end with a peace treaty not specifying supremacy (e.g. by completely exhausting both war leaders) or go on for a very long time (25-30 years) to end automatically.
