Kingpin angle is probably the biggest contributor to feel of a plate, with lower king pin angles being more stable and higher angles being more maneuverable. Some data from Roll-Line: Mistral, Matrix, Variant (all versions) have 16° kingpin angle.

Although it is classed as a freestyle plate, the Mistral is a perfect stepping stone between the Variant and a more advanced, expensive plate. I have the Roll Line Dance plate and man, is it nice. I think the Mistral would be a great choice. The Giotto is also pretty popular for rhythm skaters but it is NTS so depends if you want a toe stop housing or not.
