I would say you should get a gaming pc, run windows on it, and then get a server pop proxmox or ESXi on it. You can get some older machines that would make a perfect starter servers (old optiplexes or similar) for under $200.

I just put a bunch of old hard drives in there and treat them as 2 larger mirrored volumes. In this way, I can use the server to store and backup all non-system files for all my other servers and gaming/work computer in one central location, all accessible to each other.
