Finishers are still the moves that end a match 99% of the time, just not ALWAYS. You get that pop when a wrestler hits his finisher, then you get those 3 seconds of suspense when you think "Will they kick out?".
Finishing moves have been on a bell curve since the 80s. From simpler times with low level leg drops, DDTs, and sleeper holds to a high point of powerbombs, chockeslams, piledrivers and then back down to Peoples Elbow, Attitude Adjustment, Superman punch.

Sharpshooter, Ankle lock, Walls of Jericho for submission holds. We used to do the Sharpshooter on each other. Legitimate back pain. I think you could definitely break an ankle with that move. Others: Perfect Plex, RKO/Diamond Cutter, Flying Elbow, Stunner.
Often, superstars' signature and finishing moves are different. For example, the Undertaker's finishing move is the Tombstone, but his signature move is the chokeslam.
For me personally it is The Rock Bottom as an iconic move, but of all time the Stone Cold Stunner is more legendary as a finisher during the Attitude Era.
