Had the same problem, went to the menu -> system -> pc settings -> and set windowed mode to full screen. somehow the usual alt-enter shortcut does not (always) work

The best armor depends on your play style. If you're using slow weapons, then the most important attribute of armor is poise, which lets you attack without getting interrupted. For that, chain is okay and elite knight is better. But the best early game armor BY FAR is the stone guardian set.
