Vanstrom has an easy to learn attack animation (see bottom right of my screenshot) - get this down and make sure that you are walking (and facing) away from him as he attacks you assuming you are using the 'flinch' method. You can either attack him as his animation begins, then walk and face away ready for the repeat.
