Ingredients: 1.5-2 pounds beef shank, though I used short ribs. 2 tablespoons vegetable oil. 2 inch piece ginger. 6 cloves garlic. 1 bunch scallions. 1 onion. 1 tomato. 4 dried chiles. 1 tablespoon tomato paste. 2 tablespoons spicy bean paste, or chile-garlic sauce. ½ cup soy sauce. ½ cup mirin. 8 cups water.
