Benzoic add, HC6H5C02, is an organ.c acid whose sodium salt, NaC6H5C02, has long been used as a safe food additive to protect beverages and many foods against harmful yeasts and bacteria.

Part 1: Preparation. Add 2.0 cm3 of methyl benzoate into a pear-shaped flask. Add 10 cm3 of the sodium hydroxide, 10 cm3 of ethanol and a few anti-bumping granules. Attach to condenser. Heat the flask gently for 5 minutes. Then boil under reflux for another 15 minutes.
