The best is 100% Gith for the Medium Armor prof. Unless you specifically want to wear something other than medium armor, go with Gith. Their lack of darkvision can be made up by invocations, items, or even spells. If you want to play pure caster warlock, still go with Gith for misty step.
Race in BG3 doesn't really matter as much now as DnD in general is moving away from stats. Drawback for Humans is lack of Darkvision, which you can get as Warlock. Thematically Tieflings are still a solid choice.
