The USB boots up just fine, and allows me to get to the part of the windows installation where it asks me to select which disk to install the OS onto.

Apple solves this problem by locking the GPU to the discrete adapter when the firmware's BIOS compatibility module kicks in. Without this BIOS emulation, Windows sees invalid ROM in this area and can't load the video driver.
