Step 2: Select the Adjust time and date option from the context menu. Step 3: Toggle OFF the Set time automatically option and Set time zone automatically option.

I just installed the 21H1 update, followed by the KB5003214 and KN5003252 updates. Now the Date, Time and other icons such as Volume, Wifi etc are all missing from the Taskbar (usually on the right-hand end).

Edit: Fixed it by doing this : Open Control Panel (Win + R and type in 'control) and go to Clock and Region < Set date and time. Change date 1 day ahead, turn off internet sync in the "internet time" tab and restart.
