Pectin is a class of heterogeneous polysaccharides found in plant cell walls. Commercial pectin is extracted from citrus, apple, or other higher plants, and is used as a stabilizer, thickener, gelling agent, emulsifier, and drug vehicle in the food and pharmaceutical industries (Wicker et al., 2014).
