I do this too for the taluses with the ore on their back. It's a bit wasteful of arrows, but can be more efficient if you use multishot bows (at this close range all arrows would hit from 3x-5x bows), and you only need to do this about 2-3x.

They have 3 Heart Containers, but must be hit multiple times to crack them, allowing their Hearts to be reduced, unless the character's Weapon has piercing. If the character is next to the Stone Talus the beat before it moves, it will use an area attack, hitting all eight adjacent tiles.
