I found a way to get Disney+ HDR content to play on the Mac but first, you need an iPadOS/iOS device and a Mac running on Monterey. If you AirPlay HDR content from the iOS/iPadOS Disney+ app, it will be streamed in HDR.

It's just a Browser extension. The first time you install the it attaches to whatever is your default browser. If its Edge then you're in luck because it will attach to Edge (UWP version) and give you 720p. If your main browser is Chrome then you'll be stuck with 480p. They're being sued for this.
