All the stats you mentioned are counting stats, which is why they don't get included. Someone who is on a consistently good team that plays 170 games per year instead of 162 is going to have higher counting stats.

I understand seperating postseason and regular season stats, mainly for seeing how effective a player is in postseason play. But my real question is why can't hits, hr, strikeouts, wins, etc add to a players career total?
No, they do not. The exception was the one game playoff that happened if two teams tied in the wildcard race. The Wild Card game doesn't count though does it? Only game 163s counted. That's what u/HiltonSouth is referring to. The 163rd game.
