Project AHO and Forgotten City are very popular mods for good reason, AHO for frankly breathtaking level design, and Forgotten city for being an interesting quest that actually has multiple endings. I have to say that my favorite quest is the Infinity Gauntlet by FafnirEtherion, it is just really, really fun to play with.
The Gray Cowl of Nocturnal is one of the coolest quest mods available on Xbox in my opinion. It's lore friendly for the most part and has a ton of awesome stuff to do. A lot of work went into making that mod the incredible quest that it is.
