26 Ιουν 2019 · A rack of lamb is to lamb what prime rib is to beef—tender and loaded with flavor. It is an investment, but if the occasion is right it makes a fantastic meal. The secret is to keep it simple, sear the lamb quickly over a hot fire, and then drop the heat to let the center roast.
Cooking time will be influenced by the thickness of the racks, maintained temperature of the grill, outside temperature and how often the grill lid is opened. Move the lamb over to the direct heat zone of the grill, fat side down, and sear the lamb for 2 to 3 minutes, until nicely charred.
Put lamb rack on the grill, placing the rack diagonally across the grill grates, and cook about 4 minutes and grill marks appear. Rotate the lamb rack to create crosshatch grill marks and cook about 4 minutes longer. Flip lamb rack over and cook 2 minutes more for medium rare, or longer if desired.
