The beta (β) Fructose molecule - rotatable in 3 dimensions. Fructose (fruit sugar) is a monosaccharide - formula C 6 H 12 O 6. It shares the same empirical formula with other 6-carbon (hexose) sugars such as glucose and galactose.
In this chapter, we’ll first consider how macromolecules are built. Then we’ll examine the structure and function of all four classes of large biological molecules: carbohydrates, lipids, proteins, and nucleic acids.
Although fructose is a hexose (6 carbon sugar), it generally exists as a 5-member hemiketal ring (a furanose). This structure is responsible for the long metabolic pathway and high reactivity compared to glucose (See below structure -note: hydrogens not shown)

It is important that you be able to determine whether two apparently different Fischer projections represent two different structures or one single structure.

The 3 stages of Glycolysis. Stage 1 is the investment stage. 2 mols of ATP are consumed for each mol of glucose. Glucose is converted to fructose-1,6-bisphosphate. Glucose is trapped inside the cell and at the same time converted to an unstable form that can be readily cleaved into 3-carbon units.
