I recently fell back into the Portal rabbit hole. Happens every now and then. Found myself looking for explanations on GLaDOS’s design change in Portal 2, along with aperture as a whole between Portal 1 and 2, and I came across this interesting thread.

GLaDOS in portal 2 is actually pretty much the same as in the portal 1 version, it's just mainly her missing eyepiece that makes her look so different. Here is a neat photo comparing the two versions:
Simple answer. Game and graphics developement. Don't read too much into that. The same concept goes for the cores. They wanted them to be close to the ones from Portal 1, but needed them to be more expressive, because they have a bigger role in the story. They also wanted them to look like they could be build in reality. (see ingame dev commentary)
