Currently, to convert laurels into gold value it's apparently Light Crafting Bags, followed closely by Medium Crafting Bags. There's pages for this on fansites like gw2efficiency. Might be worth to keep a few on hand, though; they can't exactly be farmed.
Laurels are required to purchase recipes for Ascended weapons and armor. While you can bypass this requirement by buying tradable recipes and stat-swapping to what you need, it's not the most efficient route, so you should keep a few laurels in reserve if you're planning on doing ascended crafting.

I recently converted about 8K laurels across my accounts and it took about a couple weeks to slowly sell the stacks of mats off.
