The client used for classic is based on the retail client, not the one from back in the day. You could run windows via boot camp and play that way. Alternatively, you can install Catalina on unsupported Macs, more on that here.

After doing a little bit of research and testing it seems that the following works as a fix to be able to install and run WoW Classic without a problem: Make sure Rosetta2 is installed on your Mac (it should be if you installed the battle.net agent). Open the battle.net app and under settings switch to the latest beta version.
