History. The pão doce is of Spanish origin derived from a Renaissance era sponge cake known as pão-de-ló. In Fall River, Massachusetts where I grew up, we attended many feasts and all of the older Portuguese ladies made wonderful sweet bread as well which included the addition of lemon. I have very fond memories of walking around smelling the aroma of malassadas as well as massa.
