I make my filling with garlic-ginger ground chicken, coleslaw mix, and shredded carrots, fold it up in egg roll wrappers, then quickly fry them to get a beautifully golden, crunchy texture.
Ingredients. 1 pound ground chicken. 5 tablespoons canola oil. cooking spray. 2 cups carrots, grated. 1 can (14 ounces) bean sprouts, drained. 1/2 cup chopped water chestnuts, chopped. 1/4 cup green peppers, chopped. 1/4 cup green onions, chopped. 1 garlic clove, minced. 4 teaspoons cornstarch. 1 tablespoon water. 1 tablespoon light soy sauce.
