You can delete the following Vista folders: Windows, Program Files, Program Data, Users, and any folders that you put on the partition. Don't delete the Boot folder or any of the root segment files or you'll mess up the BCD which contains the info Windows uses to boot up. This will get rid of 95% or more of the old Vista system.
