Two samples were analyzed for iodide: a synthetic sea salt and an iodized table salt. Freshly prepared table salt contained 92.4 μg/L of iodide, or 46 μg/g of iodide in the dry salt. Figure 2 shows the determination of iodide in table salt using the Dionex IonPac AS20 column and conductivity and UV detections.

Different salt iodine test methods need to be used depending on the form of iodine (iodate or iodide) used in fortification. The iodometric method for iodate will not detect the iodine content of a salt sample fortified with potassium iodide, and vice versa.
Exposure to iodine may occur through drinking-water, pharmaceuticals, and food. At a concentration of 4 µg/litre in drinking-water, adult human daily intake will be 8 µg of iodine, on the assumption that 2 litres of drinking-water are consumed per day. Rapid field tests for the determination of iodide in salt were developed, based on the oxidation of iodide to io-dine and reaction of the released iodine with starch to produce a coloured complex that could be visually re-lated to the iodide content of the salt.
Iodization levels vary greatly and can range from 5–100 μg/g (ppm) of iodine in salt depending on the country of manufacture and the storage conditions.3 Potassium iodide and potassium iodate are safe sources of dietary iodine used to iodize salt and prevent iodine deficiencies.
