I had this with my iPad 1 (also iOS 5.1.1) when using the "Checkmate, Store!" tweak. Downgrading to the previous version of the tweak (use the three dots menu in cydia when viewing the tweaks page) fixed it for me. If you're not using that tweak - might be worth trying!
