Just use Simplify, it's pretty neat and should be enough for internship tracking. Just use cscareers.dev. They can track everything for you. I track Company, Role, Application Date, and dates of my interviews/OAs (if I got there). These 4 help me keep track of my progress and prevent duplicate applications.
