The hardware limitation basically makes it rare for dev to make games for 3 or more players, let alone cooperative. If you are ok with competitive, then it opens up the choice a bit. It's worth noting that Seiken Densetsu 3 is technically two-player. There's a patch to fix it. It's easy to find pre-patched roms, of course, but if you're running it on, say, a Retron 5 with the original cart, make sure it loads the translation and multiplayer patches.
