Pimsleur is better for speaking practice, pronunciation, grammar, and learning while multitasking. I suspect Pimsleur is an easier start, though it's impossible for me to say. After doing Pimsleur, Assimil wasn't hard — I'd do 4 lessons at a time sometimes (today I did 12, but that's unusual).
