I understand that there is a Read Only Disk with the name "Macintosh HD" which has all the files related to OS and "Macintosh HD - Data" which is Read/Write. But when I use option "Finder->Preferences->General->Show these items on desktop: Hard Disks" I get "Macintosh HD" not "Macintosh HD - Data".

For security reasons macOS Catalina splits the logical boot volume, in your case "Macintosh HD" into two physical volumes, one for all the system files and another for the use data which has " - Data" put on the end of the name.
