The original flavor is the classic Maui Chip, which is a combination of red and gold potatoes that are cooked in canola oil and lightly seasoned with sea salt. Other flavors include Sweet Maui Onion, Spicy Jalapeno, and Maui BBQ.
Maui onion is perhaps the most stereotypical pacific islands influenced flavour of chips, comically based on a variety of onion's name. A Nose Plunge Test revealed a mild onion aroma. They had a bottom floor of creamy, mildly salty potato, and a top floor of sweet onion.

These limited production potato chips are hand made on Maui using old fashioned methods with no preservatives. They are a favorite of locals and taste somewhat different than the regular potato chips.
