You might be able to find videos on Youtube of groups playing that could give you a feel for the mechanics that come up often. Sometimes examples are the best teachers. Just make sure the group you watch is playing 1e not 2.
It's not that PF1e doesn't like video guides or anything - it's just a bit too old for that sort of content. YouTube was still kind of new to the TTRPG field during 1e's heyday, and by the time it was a popular idea, 5e had reclaimed the top system throne (for better or worse).
Instead, I recommend starting with the core of the system. The stuff that applies to everyone: every PC, every NPC, every monster. Once you've wrapped your head around that, then you can go start browsing the many, many options for building characters. Here is a reading plan to learn the core system.
