Combining all three sources could go something like this: Character would like to make Assassin's Blood poison (DMG 257-8). It costs 150 gp to purchase. Crafting such a poison will take 30 days (1 day per 5 gp) along with proficiency in the poisoner's kit (PHB 187).

Refining the Poison: Once the stinger is extracted, an alchemist (or someone proficient in the poisoner's kit) can spend 6 days and 600gp worth of material to create Wyvern Poison (DC 14 Poisoner Kit or Alchemist Supplies check).
From a dead wyvern, I’d only allow you to harvest poison once. If you managed to keep a farm of living ones and harvest the poison while they are asleep/paralyzed/otherwise incapacitated, you can do it regularly. The key to how this is balanced is that you need to buy/craft each dose.
