The rainbow bird can only be damaged by confusion, so once you get it to proc it's a pretty easy matter of rewinding/save state scumming. I usually keep a Bemusing Arrow on hand, along with a Mind Crush (buy in Kashua Glacier or find in Kadessa) and a stock of panic bells (buy from Ulara or Rouge).
I find that speed up and slow down and pandemonium are really useful for manipulating actions, and magic signet stone is really useful for trying to reposition if the birds are faster than your characters and are using 2 turns in a row.
