If you're playing Minecraft 1.18, then Diamonds will spawn between levels 14 to -63 in any Overworld biome, and the spawn chance increases the further down you go. So you'll find the most Diamonds in 1.18 at levels -63 to -53.

When I was experimenting in my creative world I found that diamonds spawned awfully close to gold and redstone, so I decided to map that distance and see where that got me. After about 12 hours of experimenting and testing, I found this out.
