When we went to Belize in March, we tried as much local food as possible and I couldn't wait to get back home and start learning to cook it. I've been watching a lot of YouTube videos, and this channel is really helpful. She makes very simple food and every recipe is a complete winner.
The best meal I had in Belize. The chicken fry jacks that I drunkenly abandoned my family for during our last night in Placencia. These ladies were set up right across from the grocery store and I wasn't about to leave Belize without tasting something off their menu.

Looks delicious! Local Tip: Before you brown your seasoned chicken, add a little oil and some brown sugar to your pan. Wait until the sugar melts and starts to bubble, right at that point, add the seasoned chicken and brown on all sides. This adds more flavor and will bring your stew chicken up a notch. 1.
