The point of the break room is to “break” the innies mentally. Think about how exhausted and broken you might have to get to the point of truly meaning that apology. It’s infantilization and torture, plain and simple.

You've asked a reasonable question and there are just small clues in the show that hint there's more going on in the Break Room, which makes it a bad experience. One thing to note is the people hear voices while the process is going on.
From Helly's experience it seems like the longer you're in the break room, you start hearing something from behind a particular door, and it appears to be different from person to person, but it's something that causes you unease and distress. Reminiscent of Room 101 in 1984.
