Another option is to change the Short Date format in Regional settings to include also the DoW name. Windows 10 shows the date in taskbar using the Short Date format.

14 Μαΐ 2018 · Ever since the latest Windows 10 Upgrade the Taskbar now only shows the Time; the Date is no longer showing and I cannot seem to get it to re-display. I've already tried unlocking the Taskbar to re-size, Checking and Unchecking using Small Icons and I've been into the Date & Time Settings to change and un-change...still without success.
