In general windows pro version is geared towards business PCs and windows home version is geared towards the average user's pc. So unless you want to run a small business out of your house IMHO I would just use windows home.

But there is no difference between Home and Pro at the core level where performance would even matter. They are exactly the same at every level, except licensing. Pro gets access to additional management software like Group Policy.

If you're getting a laptop and concerned about your data security if it gets stolen, Pro comes with Bitlocker, which is whole-disk encryption scheme.
pro supports hyper-v (virtual machines) but you can use vmware etc on Home but hyper-v is far superior. Pro supports RDP remote servers not just clients. You can use Teamviewer or similar
