The Chicken Tingas Taco Dinner from Pappasitos have been a favorite go to of mine for years. The bold flavor from the chicken pairs so great with a simple crunchy taco shell, tomatos, lettuce, and cheese.
Ingredients. 3 boneless, skinless chicken breasts (about 650g) 3 plum tomatoes, halved (about 300g) 1 onion, cut in half. 3 garlic cloves, crushed. 3 tbsp vegetable oil. 2-3 chipotle peppers in adobo sauce, minced. ½ tsp dried oregano. 12 x 12cm corn tortillas or tostadas. pickled red onions (see recipe, below)
Shredded juicy chicken enveloped in a spicy chipotle tinga sauce makes a great taco filling. I like to roast chicken thighs for shredding because they have the most flavor and maintain their moisture, but you can also shred a rotisserie chicken if you are short on time.
