Fructose exists in foods either as a monosaccharide (free fructose) or as a unit of a disaccharide (sucrose). Free fructose is a ketonic simple sugar and one of the three dietary monosaccharides absorbed directly by the intestine.
Fructose is a keto-hexose (ketose-hexose) isomer of glucose, with a ketone group on carbon 2 (Fig. 1 and Table 1). Both galactose and fructose occur in the D-form in nature like glucose and also occur as constituent units within larger molecules.
